Artificial intelligence can already taste: Where will it be applied?

A group of South Korean engineers from KAIST University and the DGIST Institute has developed an artificial taste sensor that mimics the capabilities of taste receptors using artificial intelligence (AI) technologies. The research has been published in the scientific journal ACS Applied Materials & Interfaces (ACSAMI).

The team employed four separate sensors to measure levels of saltiness, acidity, bitterness, and sweetness. Additionally, they incorporated an individual machine learning algorithm for taste analysis.

Scientists tested their invention on six different wines and conducted experiments to determine the taste characteristics of each type. The AI sommelier with an "electronic palate" classified the presented beverages with an accuracy of over 95% and provided recommendations for selecting wines with similar flavors.

It is anticipated that this system will be applied in various industries, including food, alcoholic beverages, cosmetics, and pharmaceuticals. It will not only enable the quantitative assessment of taste but also ensure quality control of products.
